I was raised by my father (God rest his soul) in the valley of Nebraska. The background picture is of the Scottsbluff National Monument I took on a trip home... Thank Goodness I had Czech & German Grandmother's and Aunt's who taught me how to cook, sew and overall be the most giving person ever. The lady in this picture is my Aunty. She passed from Alzheimer's a few years ago. and was a huge influence on who I am and how I love. She and My Best Friend inspired this blog... I don't want anything to be forgotten!

Diva's Chili for a crowd of 50

Chili for a crowd of 50
Inspiration:  I love to cook for a crowd.  This has always been a hit at the holiday's and for Football game tailgating. Being from Nebraska, Cornhusker Football is a huge thing.  Once a husker, always a husker!
Ingredients: 
14 lbs Ground beef
2 6lb cans red kidney beans
2 6 lb cans chili or pinto beans
2 6 lb cans crushed tomatoes
1 6lb can tomato paste
30 TB chili powder
2 TB cumin
1 TB pepper
8 onions, cut up
3 green peppers, cut up
1 16 oz jar Jalapeno's, cut up (optional)
salt to taste

Instructions: Brown ground beef and onions in a large skillet.  In an electric roaster, add remaining ingredients. Add ground beef and cook to simmer; stirring occasionally to blend flavors and bring to serving temp.  I simmer mine most of the day.

Variation: Yields 50 servings
This recipe also freezes well in baggies or freezer containers.

Diva's Super Bowl Reuben Dip

Super Bowl Reuben Dip
Inspiration:  Great for any party or carry in.  I always had people at work beg me to bring this for our carry in's.
Ingredients:
6oz cream cheese, softened
1/2 cup thousand island dressing
1 16oz sauerkraut, drained & rinsed
8oz shredded corned beef
16oz shredded Swiss cheese


wheat crackers
rye bread sliced in small pieces
Instructions: In a small bowl combine cream cheese and thousand island dressing.  Cream and set aside.  Put sauerkraut in the bottom of a crock pot.  Layer corned beef and cheese.  Top with cream cheese and dressing mixture.  Cook on low for 2 hours and serve on crackers or bread.

Variation:  the crock pot will keep it warm during your party
