About Me
- Diva's Forgotten Memories
- I was raised by my father (God rest his soul) in the valley of Nebraska. The background picture is of the Scottsbluff National Monument I took on a trip home... Thank Goodness I had Czech & German Grandmother's and Aunt's who taught me how to cook, sew and overall be the most giving person ever. The lady in this picture is my Aunty. She passed from Alzheimer's a few years ago. and was a huge influence on who I am and how I love. She and My Best Friend inspired this blog... I don't want anything to be forgotten!

Diva’s Memories of Recipes
⬗⬗ ButterBalls ⬖⬖
Inspiration from: This is a Volga German tradition in our family, Both the Rutz and Zemanek families enjoyed this in our soups. Grandma Margaret always used the fresh cream from the milk cows and fresh eggs from the hen house...YUM! The allspice makes it a wonderful divine taste. Wonderful for that left over Turkey!
Ingredients | |
| 6 cups fine bread crumbs (almost 2-15 oz plain crumb pkg) 2/3 cups sweet cream (can use cream or half and half + 1/2 c sugar) 3-4 large eggs | 1 cup butter, melted 1 tsp salt 1 tb allspice, i like more for taste and usually use 2-3 tablespoons. |
Directions |
Put bread crumbs, salt and allspice in a large bowl; make a well. Heat cream in a small saucepan and pour into well of bread crumbs. Mix well with hands; pour in melted butter and mix again. Add eggs 1 at a time; if it is dry, add another egg. (Testing: make a ball and cook 10 minutes in boiling water, if the ball does not separate, it is ok. If it falls apart, add another egg) Roll into balls about the size of a walnut. This is the diva test: when making the balls, if the butter squishes and the ball is firm; it's perfect!
Variations |
boil 10 minutes in Home made Turkey or Chicken and noodles. You can find my noodle recipe on an earlier post.
The butter balls freeze nicely for later use. Warning: the are very rich and most people can only eat a couple at a time.
Yields: 50 butter balls

Diva’s Memories of Recipes
⬗⬗ Pork Chili ⬖⬖
Inspiration from: This was a favorite of my kids. El Charrito's in Scottsbluff, NE, where we were born, was a popular place we use to eat at. They had something similar on the menu and this is as close to their pork chili as I could get. Never as good as the real thing...but divine!
Ingredients
| |
| 3 lb pork roast 28 oz can of tomatoes with jalepeno's (undrained) 64 oz picante sauce, medium Flour tortilla's 16 oz of Monterey Jack Cheese | salt pepper cumin 2 TB flour + 1/2 water for paste |
Directions
|
Put pork roast and tomatoes in a pressure cooker and cook til tender. Let cool so you can pull it a part into fine pieces and remove the pork fat. In a large stock pan, put salsa, pork mixture, salt, pepper and cumin. Simmer over low heat for a couple hours. To thicken mixture, add the flour paste.
Variations
|
Serve Hot in a bowl and sprinkle with Cheese with a tortilla on the side. You can also smother a burrito or enchilada with it.

We also knew when Grandad pulled the beater out of the ice cream, we all got a lick.

Diva’s Memories of Recipes Title: Momma's Monkey Bread
Inspiration: Mommies all over the world have been making Monkey Bread for their kids. It always brought a smile to my kids face when they could smell the warm cinnamon baking on a Sunday morning. Still does:) Grandma use to make a version of this on the farm from her own biscuits and Grandad could take leftovers out into the field. History shows it goes back to the 50's and nobody really knows why its called monkey bread.
Ingredients: 3 cans refrigerated biscuits 1 cup white sugar 2 T cinnamon 3/4 C margarine 1 C brown sugar cooking spray | Instructions: In medium bowl add white sugar and cinnamon. Cut each biscuit with scissors into quarters and add to cinnamon and sugar. Stir after every can you add to coat biscuits. Spray a bunt pan and add biscuits. Diva's English Prime Rib
Diva’s Memories of Recipes English Prime Rib
Inspiration: My dad's grocery store, Alexander's Super Market in Scottsbluff, NE catered dinners and they made the most wonderful Prime Rib. My favorite was the end pieces with all the seasonings. He always bagged it up and sent it home with me. MM MM good. The store is no longer there since Dad past but the memories live on. The Zemanek's motto was always to befriend everyone in town and put a smile on their faces every single day. My brother was the meat cutter and would cut this to perfection and would prepare it for anyone who would ask. Ask your butcher to tie it with a string as well and make slits in the meat by the bone.
Ingredients: 3~7 pound standing rib roast, tied 1/4 cup garlic powder 1 TB pepper 1/4 cup beau monde 1/4 cup worcestershire sauce 1 TB oregano | Instructions: Critical: roast should be a room temp, leave out a couple hours before you put in the oven. Make a rub with the seasonings and worcestershire sauce and rub on all sides of meat. Preheat oven to 500 degrees F. Put roast in an open pan fat side up. Insert thermometer and make sure you don't have it be a bone. Put in oven and Reduce heat to 375 degrees F. Bake at temps below. I only check once about half way thru baking process. Do not open door again. |
Variation: Estimate serving 2 people with 1 Rib To figure out the total cooking time, allow about 13-15 minutes per pound for rare and 15-17 minutes per pound for medium rare. (For example, with a 7 pound roast, you would expect 1 3/4 hours of total cooking time.) Roast in oven until thermometer registers 115°-120°F for rare or 125°-130°F for medium.Once the roast has reached the desired internal temperature, remove it from oven and let rest 20 minutes, covered with aluminum foil, before carving. The roast will continue to cook while it is resting. Almost Beau Monde Seasoning Ingredients 1 tablespoon ground cloves 1 1/4 teaspoons ground cinnamon 1 tablespoon salt 1 tablespoon ground bay leaf 1 tablespoon ground allspice 2 tablespoons ground black pepper 1 teaspoon ground nutmeg 1 teaspoon ground mace 1 teaspoon celery seed 2 tablespoons ground white pepper Directions 1 In a small mixing bowl. Sift together the clove, cinnamon, salt, bay leaf, allspice, pepper, nutmeg, mace, celery seed and white pepper; mix well and store in a tightly closed jar.
